If this waste is not managed properly, it can cause major environmental problems. Grease traps are required in most commercial applications to prevent grease from being discharged into the municipal sewer.


Grease traps work by capturing the oil and grease from the flow of wastewater by slowing down the flow of hot greasy water through the grease trap (actually a tank) and allowing it to cool.


As it cools, the grease and oil separate out of the water and float to the top of the trap. The cooler water continues to flow down the drain pipe to the sewer while baffles prevent the accumulated grease and oil from flowing out of the grease trap into the sewer system.

Grease traps can be a major problem for restaurants and other food processing establishments when they are not cleaned properly on a regular basis. Routine cleanings keep odors to a minimum, inhibit grease and rancid oils from emulsifying, prevent blockage in the drainpipe, and keep the system operating properly. Signs that your grease trap is due for a cleaning are slow running drains, backups, gurgling in the pipes, and bad odors.

Grease Traps should be pumped and/or cleaned every couple months. However, each establishment requires different maintenance. Frequency of cleaning is determined by the volume of customers the establishment experiences.


Aside from standard grease trap pumping, there are also preventative measures to take in order to keep your grease trap functioning properly. A small pump can be installed that will automatically emit live bacteria into your system in order to keep your trap lines running smoothly and also to reduce frequency of grease trap pumping and cleaning. The live bacteria will eliminate line blockages, reduce surface and bottom solids, help break down heavy grease blocks, and eliminates line and trap odors. The reduction of surface solids will also decrease the need for skimming or manually removing floating grease by hand.
